Christmas Goodies Day 5: White Chocolate Dipped Pretzels and Oreos

Chocolate dipped pretzels and Oreos are a fun holiday treat to make with kids. That's one reason why I make dipped Oreos myself, even though I could buy them ready-made dipped Oreos. And whether you make pretzels or Oreos (or both). the great thing about these is that you can choose your favorite type of chocolate (I prefer white!) and then decorate with different colored sugars or other types of sprinkles. I like red, green, blue, and red/green together.

How many you will yield will vary a bit but just to give you an idea, I used a 12 oz. bag of white chocolate to make my pretzels and yielded about 100. For the Oreos, I used 14 oz. of white almond bark which covered about 30 Oreos.

Chocolate Dipped Pretzels or Oreos

Melting chocolate or almond bark
Pretzels or Oreos
Colored sugar or sprinkles
Wax or parchment paper

Line a baking sheet with wax or parchment paper. In a double boiler, melt the chocolate or almond bark over low heat. Dip pretzels or Oreos in chocolate until completely covered. Lift with a fork and gently tap to shake off excess chocolate. Gently slide pretzel or Oreo onto paper-lined baking sheet. Sprinkle with colored sugar. Once tray is filled, refrigerate until chocolate has completely hardened.

Christmas Goodies Day 4: Poppy Seed Bread

My mom has been making this scrumptious quick bread for Christmas ever since I was a small child. It's an easy, yummy snack that is great for gifting. I made a double batch today and yielded 7 mini loaves and one regular loaf. I will be giving away my small loaves and saving the big loaf to serve with Christmas breakfast next week!

Poppy Seed Bread

1 pkg. white cake mix
1 pkg. instant coconut cream pudding
1/2 c. oil
1 c. boiling water
4 eggs
1/4 c. poppy seed

Combine all ingredients in a large bowl and mix with electric mixer for four minutes. Pour into two greased and floured loaf pans or five greased and floured mini loaf pans. For regular loaves, bake at 350 degrees for 32-40 minutes. For mini loaves, bake at 350 degrees for 20-25 minutes.

Christmas Goodies Day 3: Orange Juice Balls

These are a very yummy no-bake "cookie" (it's not a true cookie, but I'm not sure what else to call it) that tastes great served right out of the freezer. Other recipes I've seen only call for refrigerating the balls, so it really just depends on your preferences. They're yummy either way!

Orange Juice Balls

6 oz. frozen orange juice concentrate, thawed
1 c. melted butter
1 box (12 oz.) vanilla wafers, finely crushed
1 c. finely chopped pecans
3 1/2 c. powdered sugar
1 1/2 c. coconut

Beat orange concentrate and butter together until well combined. Mix in vanilla wafers and pecans. Slowly add powdered sugar and mix until incorporated. Form dough into small balls (use approximately 1 tablespoon of dough per ball) then roll in coconut. Freeze on wax paper in an airtight container until just before serving. Yields about 7 dozen.

Time-saving Tips:
To easily crush the vanilla wafers, place about half of them into a gallon ziplock bag and use a rolling pin until finely crushed. Repeat with remaining wafers.

You can use a 1 tablespoon cookie scoop to get perfectly-sized balls. This was a lifesaver - the scoop shaped them for me into a mostly round shape and they all ended up roughly the same size.

Christmas Goodies Day 2: Candied Pecans

I love these salty and sweet pecans! These are so yummy and are a great homemade gift treat. This is a somewhat pricey recipe given the fact that pecans aren't cheap but making it yourself is much cheaper than buying ready-made candied nuts. Tip: if you have a Sam's Club or similar warehouse membership, check their prices on pecans. I made a double batch this year and got a 2-lb. bag at Sam's Club.

1 lb. pecan halves
1 egg white
1 tsp. water

½ cup white sugar

½ tsp. cinnamon

¼ tsp. salt

Beat egg white with water until foamy but not stiff. Pour egg white over pecans and gently stir to coat. In a small bowl, mix the sugar, cinnamon, and salt together. Pour over pecan mixture and gently stir to coat. Spray a cookie sheet with cooking spray. Spread pecans evenly in a single layer on cookie sheet. Bake at 225 for one hour, flipping pecans every 15 minutes with a spatula. Store in airtight container.

Christmas Goodies Day 1: Cappuccino Brownies

This yummy recipe was the first prize winner in a recent Taste of Home magazine recipe contest. Itmay look complicated but I promise it's not too difficult and is well worth the effort. I made this for a Christmas party last weekend and it was a huge hit!

Brownies:
8 oz. bittersweet chocolate chips
3/4 c. butter, cut into chunks
2 Tbsp. instant coffee granules
1 Tbsp. hot water
4 eggs
1 1/2 c. sugar
2 tsp. vanilla extract
1 c. all-purpose flour
1/2 tsp. salt
1 c. chopped walnuts
Topping:
1 pkg. (8 oz.) cream cheese, softened
6 Tbsp. butter, softened
1 1/2 c. confectioners' sugar
1/2 tsp. ground cinnamon
1 tsp. vanilla extract
Glaze:
4 tsp. instant coffee granules
1 Tbsp. hot water
5 oz. bittersweet chocolate chips
2 Tbsp. butter
1/2 c. heavy whipping cream

1. In a microwave or double boiler, melt chocolate and butter; stir until smooth. Cool slightly. Dissolve coffee granules in hot water. In a large bowl, beat eggs and sugar. Stir in vanilla, chocolate mixture, and coffee mixture. Combine flour and salt; gradually add to chocolate mixture until blended. Fold in walnuts.
2. Transfer to a greased and floured 13x9 baking pan. Bake at 350 degrees for 25-30 minutes or until toothpick inserted near center comes out clean. Cool completely on a wire rack.
3. In a large bowl, beat cream cheese and butter until blended. Add confectioners' sugar, cinnamon, and vanilla; beat on low speed until combined. Spread over bars. Refrigerate until firm, about 1 hour.
4. Dissolve coffee granules in hot water. In a microwave or double boiler, melt chocolate and butter; cool slightly. Stir in cream and coffee mixture [note: you may find the coffee mixture too strong, so try stirring it in a little at a time and taste as you go]. Spread over cream cheese layer. Let stand until set.
Refrigerate leftovers. Yields: 24 brownies.
