Christmas Goodies Day 7: Elegant English Toffee



Several years ago, my mom taught me how to make this scrumptious homemade candy that is sure to impress! My kids are fascinated by this candy and love it. It's great for gifting and keeping for yourself!

Elegant English Toffee

1 cup whole almonds
1 cup butter
1 cup sugar
½ tsp. vanilla
¼ tsp. salt
1 cup chocolate chips
1 cup finely chopped walnuts or pecans

Line a cookie sheet with foil. Arrange the almonds in single layer to cover a 12-inch by 7-inch rectangle. Place butter, sugar, vanilla, and salt in a saucepan. Cook over high heat stirring constantly with a wooden spoon until butter melts. Continue cooking stirring constantly until candy is color of almonds, about 5-7 minutes. Immediately pour candy over almonds and spread to cover evenly. Sprinkle chocolate chips on top. Wait 2-3 minutes for the chips to melt and then spread chocolate with a spatula. Sprinkle with crushed nuts and press nuts into chocolate by patting down with hands. Refrigerate until hardened and then break into pieces.
