Recipe Wednesday: Creamy Chicken & Broccoli Casserole



I made this recipe last week when I had a friend visiting and it was a huge hit! My kids devoured it and I think they actually liked the broccoli better than the chicken. Don't you just love how broccoli heads absorb the flavor of whatever they're cooked in?!

Creamy Chicken & Broccoli Casserole

1 tub (10 oz.) Philadelphia Savory Garlic Cooking Creme
1/2 cup milk
1/4 c. chicken broth
1-1/2 lb. boneless skinless chicken breasts, cooked and cut into bite-sized pieces
1 lb. fresh broccoli crowns, thawed, cut into large bite-sized pieces
1-1/2 cups shredded sharp Cheddar cheese
24 crackers, crushed (about 1 cup)
1 Tbsp. butter, melted

In a large bowl, whisk together the cooking creme, milk, and chicken broth, until well combined.  Add the chicken, broccoli, and cheese.  Mix well.  Place in a greased 9x13 baking dish and cover with foil.  Bake at 400ยบ for 25 minutes.

Meanwhile, combine the crackers and melted butter.  Stir the chicken mixture and then top with crackers.  Return to oven and bake uncovered for an additional 10 minutes or until topping is golden brown.
