Recipe Wednesday: Garbanzo Bean Burgers



I'm always looking for healthy, economical meals which is what attracted me to this recipe.  My husband made these for dinner tonight and they turned out really well. We all really enjoyed these burgers - even both kids! - and will definitely make them again!

Garbanzo Bean Burgers

1 can (15 oz.) garbanzo beans or chickpeas, rinsed and drained
3 Tbsp. water
1 tsp. lemon juice
1 cup dry bread crumbs (use Italian style for extra flavor!)
1 egg, beaten
1 tsp. Italian seasoning
1/2 tsp. garlic powder
1/2 tsp. onion powder
Dash crushed red pepper flakes
2 Tbsp. canola oil
6 whole wheat hamburger buns
6 slices reduced-fat cheese (optional)

In a food processor or blender, blend the beans, water, and lemon juice.  Transfer to a large bowl and add bread crumbs, egg, and seasonings.  Mix well.  Shape into six patties.

In a large skillet, cook the patties in oil for 3-4 minutes on each side or until lightly browned.  Serve on buns with cheese.
