Recipe Wednesday: Lemon Cheese Bars



This tasty treat is a snap to prepare and uses only a handful of ingredients. The secret to its simplicity is a boxed lemon cake mix layered with a yummy cream cheese filling. No would ever guess that these are so easy and inexpensive to make!

Lemon Cheese Bars

Crust:
1 box lemon cake mix
1/3 cup oil
1 egg

Filling:
8 oz. cream cheese, room temperature
1/3 c. sugar
2 Tbsp. lemon juice
1 egg

For the crust, mix the cake mix, oil, and eggs until crumbly. Set aside one cup for topping. Press the remainder into an ungreased 9x13 pan. Bake 13 – 15 minutes at 350 degrees.

Meanwhile, beat cream cheese until smooth. Add sugar, lemon juice, and egg and mix until creamy. Pour evenly over baked crust. Sprinkle the reserved cake crumb mixture on top, Bake 14 – 15 minutes at 350 degrees. Cool for 30 minutes before serving. These can be enjoyed warm or refrigerated!
