Recipe Wednesday: Easy Alfredo Sauce
My family loves this quick and easy alfredo sauce! It's a lighter and less expensive way than the traditional recipes which use heavy cream. And I'll let you in on a little secret... I often make this with Neufchâtel cheese instead of cream cheese and I use skim milk, so it's about as slimmed down as Alfredo can be!
Easy Alfredo Sauce
1 stick butter
1 (8 oz.) package cream cheese (or Neufchâtel cheese!)
2 tsp. garlic powder
2 cups milk
3/4 cup grated Parmesan cheese
1/2 tsp. salt
1/8 tsp. ground black pepper
Melt the butter in a nonstick saucepan over low heat, being careful not to let the butter come to a boil. Add cream cheese and garlic powder and stir with a whisk until smooth. Add the milk slowly while whisking to fully incorporate. Stir in Parmesan, salt, and pepper. Simmer until the sauce reached desired consistency, stirring occasionally.
Yields enough sauce to generously cover a pound of pasta, plus a little left over.

Chicken
Smoked sausage
Italian sausage
My kids' favorite way to have Alfredo is with smoked sausage which I heat up in a pan with a little bit of butter and minced onion, served over alphabet pasta. :)
