Do-It-Yourself: Green Eggs (and Ham!) for Patrick's Day



Here's a fun idea for the kids: green scrambled eggs and ham!  My hubby made these earlier this week and the kids thought it was the greatest thing.  Personally, I thought it looked rather unappetizing but they did taste good.   They're especially good with some cheddar cheese sprinkled on top!

Ingredients needed:

Eggs
Ham (optional)
Seasonings
Blue and green food coloring

Whisk the eggs and season with your preferred seasonings.  Add blue and green food coloring to achieve desired shade of green.   The blue helps get a nice, vibrant shade since it combines with the yellow eggs to make a green shade.   Scramble in a hot pan and add the ham once the eggs are about halfway cooked.    Enjoy!
